Yesterday at the bia hơi we ate some grilled buffalo meat with green peppercorns which was fantastic. Tastes like beef, but even meatier.

Posted about my adventures in Tuy Hòa a couple months ago, still remains the best place I've been so far.
Recently spent some time around different places in Hòa Bình. Mai Châu is the famous one, and is largely shitted up with le wanderlusters and old german people trying to go "off the beaten path". Mai Châu itself, the Lác village, Pom Coọng- all of the villages in the main valley itself- are all kind of fucked. I would say that at least 1/4 of the houses there were homestays, or other tourist related businesses. Very depressing because it is an absolutely gorgeous landscape, and until very recently bumfuck nowhere farming towns of simple, happy people living in their wooden stilt houses. Now they're putting up 6-story hotel blocks.
But, if you still want to see some of the "old" Mai Châu, I recommend going on google maps and looking for places outside of the main valley. There are a few out in the mountains in villages that are basically unmarked on google maps, still untouched by the tourist dollar, where I had a very wholesome experience (picrel). It was like the land that time forgot, 10 year old kids driving scooters because there's no police out here, people inviting me into their houses to eat as I walked past. One of the villagers told me about a secret waterfall out in the jungle which took me about an hour to find-(if you attempt this, try to stick exclusively to the trails, because of the landmine risk). It was beautiful but my phone died so no proof.
I won't name the village I stayed in because normies will find out about it and shit it up with "attractions" and "amenities". Just follow my method and you'll find some cool remote comfy places.
