It's alright.
It's a touristy city, but you are still in the third world so keep that in mind.
There are definitely good restaurants, and that one park with the railcarts and tree bridges is pretty cool (although they ruined the waterfall at the end by putting gisnt fiberglass dinosaurs there for no reason)
There is some good motorcycling around if that's your thing.
The lake in the middle of town is meh, the flower park is okayish. It's basically a giant instagram picture stage for girls.
It has some nice hotel/resorts and private village type places for a more luxurious stay.
The main purpose of Dalat in my experience is bring girls to it and make them feel like you are spoiling them.

It's hard to answer that. You didn't say what type of things you liked to do. There's people who can spend an entire week enjoying the two major walking streets every night, and there are people who wouldn't be caught dead in Bui Vien.
If I were to spend 2 weeks in HCMC as a first timer, knowing what I do now, I would: go to the major landmarks (vietnam war museum, the palace, opera house, cathedral, HCM museum), dedicate one Saturday night to Bue Vien, one Friday night to Japantown + Nguyen Hue, take one shopping day (combine with something like the skydeck or other rooftop), and take a few day trips (vung tau, my tho). All that is only about 7 days, but I would space those things out and in the intermediate days spend in specific districts. Find something notable in some district and plan an itinerary around it. I can't list specifics because there are still districts I have never been to. I also enjoy spending some time pretending to be a local; such as when I was in Hong Kong, one of my days I spent going to the movie theater and then ice skating at a public rink. I'd do something similar in HCMC.
I've visited HCMC a few times but it's always been a short about of time before going to a different part of Vietnam. Two weeks is a luxury where you can really savor the experience. Do you like to run? The sidewalks are awful but if you go really early to can see quite a bit of Quan 1 through running.

Only ever visited for 2 days nearly a decade ago backpacking and don't really remember anything much other than crazy traffic even as a pedestrian, a few nice restaurants. Think I went to Bue Vien and got drunk with some Austrian from my hostel both nights but looking at the map can't tell if that was it.
Will be working while there but can manage a fair bit of time off in between, keen to get around and not waste it.

Posted about my adventures in Tuy Hòa a couple months ago, still remains the best place I've been so far.
Recently spent some time around different places in Hòa Bình. Mai Châu is the famous one, and is largely shitted up with le wanderlusters and old german people trying to go "off the beaten path". Mai Châu itself, the Lác village, Pom Coọng- all of the villages in the main valley itself- are all kind of fucked. I would say that at least 1/4 of the houses there were homestays, or other tourist related businesses. Very depressing because it is an absolutely gorgeous landscape, and until very recently bumfuck nowhere farming towns of simple, happy people living in their wooden stilt houses. Now they're putting up 6-story hotel blocks.
But, if you still want to see some of the "old" Mai Châu, I recommend going on google maps and looking for places outside of the main valley. There are a few out in the mountains in villages that are basically unmarked on google maps, still untouched by the tourist dollar, where I had a very wholesome experience (picrel). It was like the land that time forgot, 10 year old kids driving scooters because there's no police out here, people inviting me into their houses to eat as I walked past. One of the villagers told me about a secret waterfall out in the jungle which took me about an hour to find-(if you attempt this, try to stick exclusively to the trails, because of the landmine risk). It was beautiful but my phone died so no proof.
I won't name the village I stayed in because normies will find out about it and shit it up with "attractions" and "amenities". Just follow my method and you'll find some cool remote comfy places.

And the expat community of Vietnam I'm sure is one of the worst in the world. I eat vietnamese food for most meals. Iced tea is 5k wherver you go, always the same price. A normal bánh mì is 20k ($0.77). Hole-in-the-wall rice / noodles place will never be more than 50k ($2). A fancy place, or western food, could be 200k or more.
I like to travel on the weekends, buy nice things, get weekly massages, go to bars and concerts, and live a very middle-class lifestyle by western standards, and my monthly expenses add up to $750. I earn more than that, so I'm saving money very nicely.
