Yeah and then you get exclusively white/blue with maybe one purple you can't use so at best all you get is a smattering of runes that will total up to maybe 2 levels you could've easily gotten at other locations. You do Evergaols day 2 since they scale, and at least one evolves into an Old Evergaol that drops a legendary.
Never do Evergaols day 1. You do the churches day 1 because they're set in such a way you will always pass by low-tier spots to hit chests and build up runes, and drop boluses, greases, and other consumables (including silver feet) that benefit your grinding on Day 2.

They scale with both time and level. Early on at low level they'll have significantly reduced HP and damage while on Day 2 past level 8 or so they will have closer to 80% HP and full damage.

If you're capable of going no-hit on these guys, then sure, but the routes you need to take to hit all the churches are good for Day 1 prep.
