I dont have to use prey items that large but I have experience in food service so I just tend to use those guidelines - submerge in cold water (eater conducts heat better than air), stick in the fridge until no longer frozen, heat up to appropriate temp (preferrably with cold water thats been warmed, hot water from the tap has the potential to leech toxic metals) just before serving.
