Because those aren't meant to be "sinful" on their own (everyone engages in them from time to time) but rather serve as a door for people to lose themselves in more heinous sins.
But for settings that either don't take itself too seriously or don't want to use Christian/catholic themes as a base of their narratives the "Embody the sin through their behaviors" is a more efficient and simple way to portray it.
