Also Celestia would not be taken by vines. I know people think the Princesses are useless but that's only a later invention. it was Celestia who sent Twilight at the right time and place to defeat Nightmare Moon. When Pinkie is about to go to Fillydelphia to help with the parasprites, Twilight says she's sure Celestia can handle it, she has no doubt in her mind. In the Discord episode, it's Celestia who sends the letters to Twilight that saves the day, Twilight herself failed against Discord, quite horribly too. When Twilight charmed her doll and caused the whole town to go wild Celestia shows up and fixes everything in an instant. Celestia is shown to be a super powerful regal godlike being, that's why the season 2 finale was so shocking, I remember people being so surprised by Chrysalis overpowering her "how did she defeat god!?" But then after that Celestia really just becomes a punching bag and gets the Worf Star Trek treatment.
Vines from the Everfree forest would not reach Canterlot and certainly not capture both Luna and Celestia. It sounds like a minor point it's not. It actually matters that you don't break the world. If you concept doesn't fit into the season 1 ideal, then it doesn't work. Celestia and Twilight and all these characters and places and relationships were created to produce those season 1 episodes. If you make it so it doesn't fit anymore then you're at odds with the very nature of the series of the creation.
Twilight going crazy in season 2 makes sense, we see her get frustrated in the very first episode and being overly worried about things compared to everyone else. Celestia being a punching bag doesn't work, that's not what her original character was designed for.
