I was raised mostly by a single mother who has always been a terrible cook. To bake a potato for example, just put a potato as is in the oven for a while and maybe put a little salt on it if you feel fancy. I grew up thinking rice was disgusting because it was always cooked in the oven in a ceramic dish and turned out to be mostly dry crunchy bits.
That said, her rule was always simple. She made one thing for supper and that's what's served and what she's having. If we wanted something else it was up to us to figure out how to make a sandwich or whatever. This was in the 80's when there were a number of cooking shows on like Pasquale or Wok With Yan so I basically taught myself to avoid my mother's terrible cooking. Fast forward, I do everything from scratch and can make just about anything. All works out in the end.
