Why do so many adult men refuse to eat vegetables? So many guys I know will only eat green if it's a piece of lettuce on a cheeseburger. My FIL literally called asparagus and broccoli "absolutely disgusting" like he was a toddler. He calls salads rabbit food or food that food eats. No he's not healthy at all, a salad would definitely do him some good. It's weird because you can look at movies or documentaries from the 50s or earlier and people ate a ton of veggies. They'd have a small piece of meat or fish, some potatoes and at least 2-3 servings or more veggies at the table. But it's becoming increasingly common for people to just avoid veggies entirely. Is this just some picky eating thing? I don't understand how risking colon cancer is seen as manly.

It's a result of parents allowing kids to choose whatever they wanted to eat instead of fixing them a traditional meal. Since kids don't tend to like vegetables, they never developed a taste for them even into adulthood.

I liked them as a kid but I think it was because I'd eat them raw as a snack when I was a kid with some dip. I remember asking for chips with dip but my mom brought raw veggies instead and she told me that I'd like that more. She wasn't correct but I still enjoyed them. I'd eat them steamed too but I preferred raw with some dip if I had the option. People that dislike veggies as an adult probably had parents that didn't bother to expose them to new foods. They'd just keep giving them nuggets, mcdonalds, and candy into their teenage years.

Personally, I feel like the variety of the exposure is also a part of it. As a kid, I loved raw carrots grated into thin stripes with raw apple but hated mushy peas and mushy carrots due to their texture. I think that a lot of parents simply have this idea that vegetables are vegetables no matter the form and don't try to show kids different ways of enjoying their veggies. I feel like a bit of variety and trying out different vegetable based foods helps kids not only by letting them develop a broader palate but also by helping them find which types of the vegetable dishes they like the most. Some kids like their carrots mushy, some like them as raw dipping sticks and others prefer them grated with apples.

I didn't read the book, I just know it exists. My assumption, after having had a kid here but helping feed younger family members there? Pears. While you can get baby food without pears in the US, they cost a premium and pears are added to so much stuff here because they're ridiculously sweet when cooked and mashed. As such, American babies get accustomed to sweet foods from a very early age. Of course, there's nothing wrong with sweet things unless it's to the detriment of other flavours, which is what tends to happen here. Pear mixed into baby food across the pond? It happens, but not nearly as commonly as here.
If you've been on /ck/ a while, particularly in threads about babies, you might remember me posting when my son was an infant about how babymomma and I would steam, puree and sieve vegetables like cauliflower and broccoli for him to eat. And you may remember how I described his faces. He would make disgusted faces at certain foods, like spinach, but still lean forward to eat it. He liked cauliflower but really hated broccoli. He would make his disgusted face or a "fuck outta here with that bullshit" sound and turn his head away from the spoon so he wouldn't eat it. So we started to mix the two. First we did a 1:3 ratio broccoli to cauliflower. Not a fan. He tried it but started to turn away from that after a few spoons, too. 1:5 was the magic number. He'd make the face but still lean forward for more, as he did with spinach. Then we started to alter the ratio to add a bit more broccoli. And a bit more. And a bit more. It was an acquired taste for him.

I cannot afford vegetables wippo only boxed food, frozen ground beef and chicken thighs. Potatoes and onions are cheap and versatile, leafy greens and tomatoes spoil fast. Even if I decided to eat every meal with a side of salad all the flavor has been genetically stripped away from them, I can't afford the fancy stuff that comes in a black tray.
You make fun of me for washing chicken, coating it in seasoning mix and serving it with instant mashed but ghetto chicken comes with gunk, seasoning powder is just cumin, paprika and garlic and those go great on chicken and instant mashed is good enough for most restaurants to use it and it's something that can feed a family under a budget with little prep time

It's not a gender thing, my gf is the same way (although to her credit, she has started eating salads more recently). It's a combination of Western industrialized food and poor parenting, IMO if you can't make the time to learn to cook, make something actually healthy and not gross, and have the willpower to make your kids eat it then you're not fit to be a parent. This goes for both men and women, not knowing how to cook is neither manly nor "empowering", it's just delegating a skill essential for survival to corporations who want to kill you out of laziness

Adults who don't like vegetables had moms who were shitty cooks. My mom's from Mexico and we loved vegetables growing up because she's a great cook. It has nothing to do with skin color but with culture, Italian, Spanish and Greek moms all know how to cook wonderfully and vegetables are integral parts of those cuisines.

It's been going on for a few decades now, but ultimately I put the blame firmly on how we're in a mid-point where culture is mass in that ideas can get around the world in an instant, but indie in that everyone can cherrypick their own culture until they have a small group of people who all agree with them.
That eventually works its way down to food. While now you can get a fresh Avocado on your sandwich in New York in the middle of January you have the counter to that of people who only want a burger or only want chicken wings and fries. So you have these haute Michelin striving restaurants all with an on-the-menu bacon cheeseburger and fries.
Like I get it that French restaurant in Tribeca or something, but you've got a 5 course tasting menu, that includes different French ethnic takes on traditional french dishes and a Bacon/Gruyere cheeseburger with arugula and caramelized onions served with fries for the less adventurous.
I think that ultimately trickles down from the haute to the people at the grocery store. The ruling class eating 50 dollar cheeseburgers ultimately leads to a culture where we have some people who are super healthy and another group who can't be arsed to move today because they ate too much yesterday.

Kids do have a stronger sense of taste but the issue is that parents either don't feed their children veggies because they themselves dislike them or they have no idea how to prepare them so they just feed their children a mess of boiled veggies with no other seasoning or sauce. Even dumping some crappy processed cheese sauce over them would encourage children to eat their veggies but most Ameican parents won't even do that.

I enjoyed vegetables as a kid too but it was very rare that I was simply served them steamed with no other seasoning. My mother mostly incorporated them into her food. For example, many of her pasta dishes were loaded with veggies. She'd also fix me tasty salads and I enjoyed those a bunch as a kid. Even her "junk food" was loaded with veggies since she'd never order us pizza. She'd always make it from completely from scratch. I don't think many kids were lucky enough to have a mom like mine.

I don't think it's luck. It's cultural. I ate everything as a kid, too. I even ate things my parents didn't like, such as bitter melon. Certainly, there are foods I don't like but I'll still eat them without complain if someone has prepared them for a dinner or something. I just won't buy it myself. Offal, for example. She'll eat it if I cook it as an egg curry but he won't touch it at all under any circumstances. He absolutely despises it. it's the one food we relent on. If I cook bitter melon in egg curry, I'll buy a zuke to cook it the same way just for him. It takes less time than the melon and I can use the same base for both do we can still eat together.

I was raised mostly by a single mother who has always been a terrible cook. To bake a potato for example, just put a potato as is in the oven for a while and maybe put a little salt on it if you feel fancy. Yeah, I was raised the exact same way. However, I lucked out because my mother was a really good cook. Eventually, my mom and dad divorced and I lived with him. Boiled carrots are actually some of the tastiest vegatables if they still have some "bite" (they can be fancied up but they're often too sweet when roasted, I find). Broccoli is very prone to being boiled into mush though, but it also has a relatively unforgiving range between cooked enough and pallid mush (steamed is best but that takes fucking years)

Still, vegetables are actually somewhat of a meme - in that they're no where near as nutritious as how they're LARPed to be. You should still eat them because they add a culinary element to your meal that's generally incomplete otherwise.

I don't know which AI you're using, but it's answering your question from an America-centric point of view. It's not taking the relative income of other countries (or indeed even considering other countries at all) in that answer as evidenced by the fact that it references the NIH.
You might be able to check the FAFO or whatever it's called. It's some agricultural organisation that tracks agricultural product usage, export, import, consumption etc. You can tick which boxes you want to search for according to various factors, including national origin as well as locality type (urban, rural, suburban etc) and income to get a better idea if you want to get a more global understanding.
The reason I keep hammering the cultural aspect is because I'm a mixed culture person living in the US, raised in three different countries and can tell you from first hand observation that this picky eating thing, to neither the degree nor prevalence, just doesn't exist outside of the anglosphere. A kid in Switzerland might not like seafood but he won't have such a full on meltdown that the mental health industry needs to come up with a term for it (ARFID). A kid in Singapore may not enjoy san choy (I certainly don't!) but he's not going to lose his shit over it. A kid in Italy may not like cabbage but he's not going to shoot up the school because the dinner ladies cooked riso e verza again. I mention those three countries because I've lived in each of them. Animal products provide all nutrients. Yeah, pretty much this. It's really not hard to get kids to eat veggies. I know a lot of kids who love broccoli and carrots and asparagus and all kinds of shit, but it's because their parents actually prepared them properly and ate them as well.

We're all kind of a victim of our own parents food preferences, in a way. If you happen to have parents that don't eat well and/or suck at cooking, it can really mess up your relationship with certain foods for a long time.

I have, yes. There's a youtube channel run by a couple of vegans who also consume no fats or oils other than what's in the base ingredients. They look like liches, but very happy liches at least. The one on the right is in her 90's, runs 10 miles a day and when she makes cakes for special occasions has to make 2 because she eats an entire one herself. Look down on them all you want, but they're probably happier on their worst day than you are at your best if the comments you've made here are any indication.

HA! bullshit. I didn't/don't like vegetables not because they are bitter but because they taste DISGUSTING. I used to like radishes as a kid even though they were bitter. I would eat them like grapes. now as an adult they taste nasty, not bitter.

broccoli, cauliflower, and brussel sprouts all taste disgusting no matter how they are cooked. yes even cooked in the way you are going to respond with. I have tried them every way imaginable. I can tolerate broccoli when it's covered in curry.

the only vegetable I like is grilled asparagus. not steamed, not boiled, not sauteed, grilled.

I don't like carrots precisely because they are sweet. they are vile when cooked (not bitter). if covered in curry they are tolerable.

peas are the most disgusting vegetable I ever had. when forced to eat them I would swallow them whole. whatever flavor they have makes me gag, even the smell of them. I have not eaten a pea in 50 years.

I like mushrooms, onions, and potatoes. though I hated mushrooms and onions as a kid.

there's only so much you can do before you are abusing a child. forcing children to eat food they hate, only results in reinforcing their behavior, and resentment later in life.

my dad would eat ANYTHING (except mushrooms and onions) one day he made dinner with fish which no one else but he liked.

he got so pissed he forced fish in to my mouth and slapped me in the face for spitting it out, he scared my sisters so much they pretended to like the food.

I still did not eat the fish, and there is NOTHING he could have done to change that. NOTHING. not even starving. I got my revenge later in life when he was old and I made every dish I served to him with onions and mushrooms in it. he had no choice but to eat it.

i only ate more veggies as i grew older. mostly 'cause after indian food poisoning, i would get all bloated if i didn't eat enough fibres in a single day. that and i am cheap. grains are better though.

I actually read that book while my wife was pregnant, and have been utilizing the strategies in that book on my son. He's a year and a half, as soon as he started eating, he's been fed all kinds of stuff and loves most of it.
