Pepin is too old to give a shit.
>How careful are you when handling raw meats
Very careful. The biggest thing to prevent food poisoning issues is to not be a retard and actually think about what you're doing when you prepare, and don't be a cheapass who only ever uses one board and one knife.
The thing about food poisoning is that it's managing risk. If you don't follow it, you increase the risk of having an issue and the risk compounds the more you fail with it.
You might cross contaminate something, but nothing happens, maybe you didn't eat the thing that could have made you sick, or you later washed something. whatever.
but if you do it again, maybe this time you do eat something that has been contaminated, or cooked improperly, or stored in a manner that means the contamination from bacteria won't be removed by cooking.
and that time you might get sick. in the usa it's estimated, over the whole year, 1 out of 6 people will get sick from food poisoning. about 5.6 million people.
you might get the shits for day. maybe you end up sick for a week.
but you might end up in hospital. Out of that 5.6 million people in the USA who get sick about 1 in 450 of those will end up in hospital.
And out of that 1 in 450 who end up in hospital, 3000 of them, or 1 in 70 will die.
Most of those will be old people who probably would have died anyway, but do you really want to be the one guy who dies aged 25 or whatever because he got worked by the tiktok "men when cooking" meme videos and decided to be a big strong manly man who never washes anyway?
