Put an onion among your seed potatoes. Onions emit ethylene, which triggers and accelerates sprout growth in potatoes. But be aware that the moisture emitted by the potatoes makes that onion soft and vulnerable to mold and bacteria, which you don't want to spread to your seed potatoes.
