I mean there's plenty of physical proof, and the testimonies weren't taken uncritically, like, historians take into account whether things were seen firsthand or just hearsay. We have testimonies from Sonderkommandos who had to work there for months, in some cases years, and the chances of misinterpretation were nil. Which aligns with the physical evidence too
