One of the greatest Russian influences on Chinese cuisine is a type of bread found in Heilongjiang called "lieba" (列巴), which is related to the Russian word for "bread".
And don't even get me started on the "luosong" (Russian) soup found in Shanghai and HK inspired by borscht, heavy work on the "inspired". A very good dish, as long as it's not the canonical recipe with ketchup and everything.
