The oldman in Ichigo is his quincy powers, that's what he has been using nearly all the time in the series. He doesn't use a bow but he's just a quincy with a high quincy powerlevel and a huge quincy sword wearing quincy shadows all emulating a shinigami because he thinks he's just a shinigami, but nope, he's a quincy with shinigami powers, and this shinigami power is the monochrome guy he has been rejecting all the series.
Once they tell him his zanpakuto spirit is the hollow he has to face the truth, that he has always been a quincy larping as a shinigami and he barely ever used his actual shinigami power (the hollow stuff). They then give him actual shinigami clothes and sword and he truly becomes a shinigami-quincy wielding his own, old quincy sword (inherited from his mother's blood) and the new, hollowed shinigami sword given to him to properly manifest his hollow side (which is within the powers inherited from his father).
