Because you want to avoid any lore building in a franchise like Pokemon full of retcons, inconsistences and sensible questions like do people eat Milktans? Pokemon eat other Pokemon? Ghost Pokemon are Ghosts of people, other Pokemon or just are born Ghosts?

Basically the entire setting worked better when Pokemon were just extraordinaire rare animals but real animals still existed
