Preheat your oven to 350 Fahrenheit.
In a bowl, mix 2 cups flour, 1 teaspoon baking powder, half a teaspoon of salt and half a teaspoon of baking soda.
In a separate bowl, mix 3/4th of a cup of sugar, 1 cup of buttermilk (if you don't have buttermilk, substitute with 1 cup of milk mixed with a few drops of white vinegar), 1/3rd of a cup of canola oil, a teaspoon of vanilla extract and one egg.
Incorporate your wet and dry ingredients and mix until obtaining a clumpless, homogeneous batter, then mix in 1 cup of either chocolate chips, berries or nuts, to taste.
Grease a 12 muffins tray and fill it with batter, then bake in the oven for 18-20 minutes, or until a toothpick comes out dry after being inserted.
