Habits don't form out of nowhere, you need to establish them.
If you don't put effort into changing your mindset and making the alternative enjoyable, not good habits have a chance to form, if for example you lust after greasy fatty foods the entire time and all that stops you from indulging is willpower, nothing will change.
Try to put more effort into mentally reframing these foods, find alternatives that are healthy and enjoyable (for example if you cook foods that are healthy but really enjoyable both in taste and satiety, your cravings will diminish), maybe read a book about habit forming or something. A habit is more than just doing the thing and hoping it sticks.
