Resident Evil (2002) is not considered to bea part of the same series as the other remakes.
The remakes are given stylistic consistencies in their branding that are more obvious in Japan.
In Japan, they are known as

Whereas the 2002 remake is just

In English, the "RE" aspect is retained in the distinction their logos make from the newer titles since 7, having the red coloured "R" and "E".
So, technically, Capcom did in fact skip the first game in their remakes. Also more generally the remake of 2 is treated as the first title rather than a sequel to any prior remake.
