The toboggan levels don't work because they're overly complex. The minecart/roller coaster levels in DKC1/2 are, well, on rails, so it's very easy to understand when you have to jump. 3 complicates this placing them in normal looking levels, where you have to pay attention to all the platforms and the enemies scattered around, which takes more time to process.
But shit really gets fucked with the tube levels, where they add the ceiling rail you can hang on to, enemies you need to jump in order to reach the rail, as well as obstacles on the ground placed extremely close to each other. It's such a clusterfuck that you need to memorize it just to know what to fucking do.
