It's not a headcanon. It's stated time and again that Sonic does have feelings for Amy, and that episode of Sonic X wouldn't have existed if Sonic Team said otherwise. Everyone else, including Amy gets very strangely OOC all the time in that show, but Sonic's character is kept the "closest" in some ways to his game counterpart even if not 1:1 like some would believe.
Either way, that scene in the series 1 finale is the closest to depicting Sonamy on Sonic's behalf rather than just Amy's. But the point is that whether or not Sonic does have feelings for her, was never the "problem". Because Sonic having feelings for someone does not, and will not ever, mean that he will drop everything to marry that person and "settle down". That will never happen, ever, with anybody.
Amy in this case is just a stand-in for "girl Sonic likes", and he will refuse "marriage" 100% of the time and that will never ever change. It doesn't matter how much Sonic loves you, he will never marry you. That isn't happening. Sonic is never getting married.

It's why that scene with Sonic & Elise in the forest has Elise stand there and realize that once Sonic defeats Eggman, Sonic will leave Soleanna and never look back. No matter how much Elise feels about Sonic and wants him here, he's not going to stay. Even if Sonic feels the same way about her, he's not gonna stay. So, all Elise can request is that when Sonic leaves to go on another adventure, he remembers this place. And that, Sonic can agree to. So, even after the entire space-time continuum has been rewritten so this event never happens, Sonic always keeps his word.
Sonic is the kind of guy who'd definitely hate making promises. But if he ever does, he's going to keep it. Which is precisely why he's never getting married. That's a lifelong commitment, and Sonic does not want that. Which is why Amy takes it upon herself to chase after him, wherever he goes. That is their solution.
