BTW this is a reason to use SERVER, and specifically older builds like 2019 because most of the telemetry can be gutted with gpedit.

yeah but the 2021 version IF updated gets tons of "services" who belongs to the professional version, unless you leave it stock and disable windows update. LTSC 2019 is kinda fine to update.
