Maybe random events more than encountering another caravan or getting "robbed" (see pic rel). A caravan spotting something in the distance , little trading posts you can stock up on supplies on, just events involving what your pawns might be getting up to would go along way. Maybe taking a page out of Battle Brothers book, I remember really enjoying the overworld in that game, added so much personality to the world and your bros.
