supposedly mollusks and cephalopods spoil really really fucking quickly and pose huge health risks if you don't prepare them immediatly, like the instant, you kill them. Their meat etc. is much much more welcoming to all kinds of bacteria so if you were to kill them and let them chill around for a minute on the desk while you cut it up properly it would be like leaving a piece of meat on the desk for an hour.
That's the reason they throw crabs and lobsters into boiling water before killing them and why nations that eat so much fish and squid tend to just not bother and keep them alive for as long as possible.
Helps that they're all soulless insectoids, but there's an actual reason this is done.
