Toby literally introduced Gerson to us so the player can grasp the concept of Dustners for the reveal that Dess, the Roaring Knight, is a Dustner who can temporarily exist in the Light World (during night). (Night-mare-Knight? Get it?)
It's literally just how storytelling goes. A writer will introduce a big lore concept with a simpler character near the earlier parts of a story only for it to come up again near the end.
Dess is a Dustner and she's possessed her favorite baseball, the thing she summons in the fight that turns into a sword. Just how Gerson possessed his hammer and that's what he wields in the Dark World.
