I know it kind of breaks the early balance but I'm addicted to doing those month 2 landed large ufos (usually abductors I think). They're hard as nails because you don't have any upgrades at all and you're up against 2 dozen xenos including chryssalids, but making careful use of grenades, methodical movement, overwatch, basically every tool at your disposal lets you pull through. And you feel like a god when you pull it off. You get a big pile of loot and it costs the aliens so many resources that they struggle to do anything serious for the next 2 months.
