I can get what you mean, and I am to an extent moreso gesturing at vague ill-defined comic tropes and vibes, I'm moreso saying that I don't think writers envision "X rando villain caused Thor to grunt with a blow" as then precluding his bigger feats of durability or strength, the writer of the Bi-Beast/Man-Beast fight is also the one who wrote this only 10 issues later for example, because it's not reflective of anything outside of the necessities of that fight in a lot of cases. This does go both ways though.
On the hammer point it would get into a matter of how Thor is generally able to punch out characters who can take full blows from Mjolnir, his fight with Beta Ray Bill under Simonson is a good example, so it would depend on how big the disparity is between him and his opponents in a lot of fights. There's a couple of statements that Mjolnir doubles Thor's strength, which I don't think is literal but is probably about right anyways.
