Lodoss war is good as well but the ending feels very rushed and a bit incomplete (largely because it was the books were still being published at the time) Rune Soldier was also done before the books finished publishing but its a far more comedic less serious show so they were able to pull of an original ending that felt natural and not like you're missing something major

not on your list but if you're a fan of more classical sword and sorcery style fantasy maybe pick up Scrapped Princess at some point

I would also just drop claymore altogether, go read the manga, the anime adaptation isn't terrible for the first few episodes but it was published so early in to the run that it misses out on so much of the context from the manga that makes the plot actually make sense, the manga is excellent though and the art is amazing

Also watch Last Exile if you haven't already (only the original not Senpai) aesthetically one of the best anime of the 00s, I wish they would re-release the model kits for it I wasn't in to them at the time because I was so young but now a days I'd love to get my hands on some of the ships
