idk how high you set? usually we're around 200-250, over 300 for baguettes around 180 for big pieces...
soooo if the bread dont rise it can be..
*take the magic baguette book*
bread stay tiny
-weak flour
-too much hydratation
-dough too cold
-not enough fermentation
solution:
put strongest flour
less water
more warm water
let it rest more
and add more yeast
also if it was great before but its turning flat in oven it's the opposite
too much yeast warm water and fermentation time
also can be bc you were barbarous with the bread and dropped it before going to oven
(theses lil guys are very fragile at the last part)
