That happens, all you can really do is keep a low rod angle and basically handling the fish. An 8 weight is a good idea, carp are fun on the fly. I really like fast glass for carp- the lower line speed gives a more delicate presentation and the extra modulus of glass gives me better fighting power imo- my bad ass glass was a great carp stick and my current 7 weight is superb.
A small.black streamer on a slow retrieve is absolutely something a carp would eat, too, so good odds you actually hooked it legally. I tie a carp fly I call a backwards bug, it's basically a rubber legs foxy clouser, it works great, and I switch between lead eyes and bead chain eyes depending on how fast I want it to sink.

Panic and excitement. Adrenaline turns the monkey brain off and the lizard brain doesn't know how to fight a fish, it can take a lot to train your nerves to still think while wrangling a lunker.
