A huge part of it is a result of the games exploding in popularity.
The games get a normie audience and I explicitly remember this same audience complaining about the difficulty and the "unfairness" in dark souls.
As even the normies begin to adapt they have to increase the difficulty and/or time one way or another in order to keep upping that ante or anyone that beat dark souls is just gonna cruise through it because it's gonna be the same shit over and over and the games gained that popularity in big part because of that difficulty.
It sounds obvious but it's a very hard thing to achieve, not only you gotta balance the normie and the actual vidya player but you also have to add in the seasoned autist that has been playing religiously since demon souls and the guy that has never played a roll sloppa in his life.
And ultimately development is a give and take, is your team really gonna dedicate thousands of man hours into this that could've gone somewhere more noticeable?
