I feel like the reason why is simply that making races is a lot more demanding and that if a race is made its best to be similar to humans physically. I think Elder Scrolls is the best example of it, with the Khajiit going from cat people who have digitigrade feet while nowadays they're depicted as plantigrade.
It seems to have been a thing since WoW, since the original alpha tauren and trolls had less feminine females.
Finally, there's the problem of things being not human enough. There's a reason the LotR races are still used so often despite just being humans with a couple changes physically. We relate to things that closely look like us. It's why, as orcs got better in PR, they looked more like green humans compared to the pig-like brutes of earlier generations.
