Just use status effects.
You don't even need to alter your build, just infuse your weapons with Cold or Blood and play as usual.
Elden Ring does have huge HP bars, but this is balanced out by having lots of ways to increase player damage, but that requires a bit of extra game knowledge.
But with status it's just a matter if choosing the right infusion and even at level 1 you'll deal good damage against bosses.
