Basically a lot of same things as Noelle and Susie, except Noelle is somehow worse even though they do have some interests. Noelle is the kinda girl who will threaten to kill you if she thinks you're cheating on her.

With Alphys it's more like the nerd getting the jock tomboy fantasy but it's played as powerful and stronk because they're lesbians. I ask you to, again, look at it in the lens of a normal hetero relationship.
Why would the greasy fat neckbeard be able to get with the hot tomboy? He's either got mad game, mad money, or they connect on a weird personal level, and these are all things they don't have.
