Rarity and the other judges have all done and said things just as bad or worse than AJ did. Hell, picrel was their reaction to her calling a dress "still just black". If calling a dress black gets this kind of reaction, then what kind of criticism is AJ supposed to give? She's just doing what Rarity told her too, and Rarity blames her when it all blows up. Applejack was never a 'brutally honest' character in previous episodes, she only does it here because it's what Rarity told her to do, until Rarity changes her mind and then acts like a bitch about it.
