If I had to wager a guess as to why they stopped it may have been because people wanted background and even expected background miniatures to be in the box.
But it would be amazing if 40k utilized the IA diorama photography style in codexes as it helps set the tone for gritty imagination while staying grounded in fantasy because we know that they are just highly edited miniature photographs.
And it might be a good way for GW to show off their wealth on other companies too poor to afford artists and have to resort to AI. I'm pretty sure these diorama pictures are more expensive than commissioning an artist.
