From memory Un/holy fucking sweeps Samurai on equal stats like 9 times out of 10. The differences in priority coverage, resistances and damage reduction means the Holy plate lasts longer and gets staggered less which translates to extra attacks overall. The only reason you'd want Samurai over Holy is if you really need arm protection to keep your two handed weapon in the fight for longer, or because you think it looks cooler or have easier access to higher quality Samurai than Holy.
