A super underrated period/part of history within the time span you mention is Colonial Mexico and the Spanish empire

In 1521-1600, even to 1700 in some cases, you essentially still had Aztec nobles and soldiers, some towns and cities etc existing in a mostly prehispanic fashion with a lot of traditional clothing and architecture with only partial or gradual adoption of Spanish traits, some Maya kingdoms and other bits still unconquered, joint Spanish-Mesoamerican expeditions up into the US and down into South America, with some Aztec, Tlaxcalteca etc soldiers even participating in campaigns in the Philippines, in some cases you had Aztec nobles, Conquistadors, Pirates, Knights, Samurai, Native Americans, Inca lords, Filipino people etc all fighting or interacting with each other, etc
