It's because it's not a free market. The small handful of loaded tradermains control the entire supply of rare unusuals because there are no more entering the economy and only decrease over time with many being stuck in dead or collector's backpacks, and if someone who actually plays the game tries to sell their rare unusual it quickly gets sharked then inflated in price. Tradermains exclusively trade with each other so the line keeps going up on everything. I would love to see Valve massacre the economy but that would frighten the Counter Strike gamblers and traders.
