Played ca. 40 demos so far, these are the ones I actually liked. Nothing has truly "wowed" me yet though:

Blood thief - Similar to Neon White but with a thief-like aesthetic
Metal Eden - Very polished doom 2016-esque shooter
Ascend to zero - Good music and interesting premise. The resource-management aspect to builds/ combat is cool too
Jupiter Hell Classic - DoomRL good
House of Necrosis - Surprisingly fun RE dungeon crawler
