Wind Waker is fine. Nintendo wanted a Saturday morning cartoon look and played with it.
Meanwhile, I think bringing OOT to the next gen would have been a bad move. Go look the first Gamecube tech demo and the realistic shaders aged badly. They looked more like plastic dolls than a painting like the N64 achieved.
