Welcome, you are correct in your analysis. I barely ever use inpaint sketch though, just move the sketch to the masked inpaint tab instead.

You can just gen the picture and throw it through a pixelating process.
I tried this previously and did it again for picrel. AI inherrently is very unlikely to create correctly pixelated images. But asking it to make pixelated gens is going to mimick the actual pixelartist I guess.
