The ghost essentially acts like Cafe's guardian, an entity with its own set of objectives meant for Cafe. After winning a G1 race in the second half of the career run, the ghost starts possessing Cafe, with a cold and unnatural tone, to make the Trainer understand that the greater goal is to go traveling in France and win the Arc of Triomphe. And like the other anon said, the ghost punishes Tachyon whenever she oversteps her boundaries, including when she is putting her experiment samples in the Cafe's corner of the room (they all went up in flames afterwards).
