Toby hasn't specifically acknowledged Chapters 6 or 7 anywhere, at all. If they weren't on the Chapter Select screen we wouldn't know that they exist. Gerson alluding to one more Chapter after Chapter 5 is the most confirmation we've gotten. I'm pretty sure Toby just hasn't wanted to talk about or tease anything too far ahead until now.
That said, I do think Chapter 4 was the definite "point of no return" and I can imagine that Chapter 5 will diverge enough that Chapters 6 and 7 play out completely differently on the Weird Route.
