In my headcanon it's not fine to eat Magikarp because they probably taste like shit.
They are incredibly bony, with little meat and likely bottom feeders. Same as present day wild karp (no chance Magikarp are competing with grazers or carnivores) which means you'd have to do a lot of preparation for very little gain. This is probably another reason why they are so widespread, not even wild Pokémon want to eat them unless they are desperate because their NUTRITIONAL value is low.
Richfags probably keep them as vanity pets though. Only the upper 1% of Magikarp will exit the invasive brinepool that is their miserable species and evolve without the help of a Trainer.
