It's by reading fanfic crossovers that I find new shit that I like. Specially the fics crossing with an isekai anime or a world that is very friendly to crossovers, like RWBY.
Things like RWBY (and helluva boss) are better when you never interact with source material and instead pick up the pieces and make something better (or at least more enjoyable) than the original.
