Haven't had much any of the crazy high-quality baluga stuff but salmon caviar is fucking delicious atop creme fraiche and served on a neutral butter cracker. It's not the priciest thing, you can order a couple small jars of it for a reasonable price and snack on it over a few days. Ordering the caviar is as great excuse to make creme fraiche if you don't have any so it's a win-win.
