daft trick i picked up from some Jamie Oliver bolognese recipe (hidden veggies for the kids - actually great tbf):
lentils. pad your beef mince out with lentils. if 500g of mince makes four portions for a meal, you can get an extra portion or two for pennies. still getting protein, still tastes about the same.
