>Nioh makes you learn combos
There are no real combos in Nioh unless you mean canned strings, which the game does have, not just in your base moveset but there are multiple martial skills in the game that have multiple attacks you can press in sequence or holding the input to do more attacks. You can cancel your basic attacks into counterspark removing recovery entirely when timed well. You can seamlessly go from basic attacks/counterspark into martial skills.
Learning combos IS important in Ronin, more so than Nioh, because when an enemy is in a panic state you have a limited window where all of your attacks will hitstun them (so they can't hyperarmor) and this panic state will end prematurely if you don't combo them fast enough.
>that's not even mentioning the soul cores which can range from anything like elemental ailment application to mobility to defense to grapple
And martial skills can do similar stuff? So what's your point?
It seems like you aren't exploring your options with martial arts at all. You're moreso complaining that your basic attacks don't do much but ignoring how important martial skills are and especially how there's a lot of depth in dancing between styles using those various skills. You have skills that are meant to put pressure on the enemy while giving you the ability to cancel out of it quickly to counterspark, skills that deal massive ki damage if the opponent blocks, skills that give you mobility, skills that have defensive properties i.e. either an actual counter or with guard points, skills that have massive range, skills that work best in combos or getting more damage vs out of ki enemies. There's plenty of depth but you're pretending it's not there likely because you didn't bother exploring the game much and quickly cast it off as being "simplified"
