Oh yeah the ottomans were bad but imo that doesn't mean you can't use them as inspiration for OC not even their most horrible aspects.
I could easily imagine a CYOA all about being a conqueror that takes hostages (waifus) from your defeated foes or something like that.
If anything making all factions as horrible and bloody as possible is what I like the most even better if they have advocates talking about why they are actually good.
