Being hit by cold iron was simply a more flowery way of saying that you can hit them with weapons. Which simply wasn't a given for a lot of mythological creatures.
Don't think there was ever a line that mentioned them being particularly weak to it, or that it reduces their powers.
Not to mention that dwarves were elves in the original myths, and of course forged all manners of weapons, armor and other funky items.
Not gonna say that you can't make elves that don't use metal in your systems, for flavor and other thematic reasons. Just gonna autist for autist reasons
