You are probably cooking them faster than necessary. Low heat. Also all commercial grills have a layer of grease and oil meanwhile at home in a pan I assume you're putting them in completely dry. That layer of grease is important. I learned this working as a burger flip in highschool. The first batch of burgers after I had cleaned the grill was always suboptimal.
